| The [yellow tail] Chardonnay is a blend of selected parcels of fruit from some of Australia's best Chardonnay growing areas. Using fruit from the Hunter Valley, Cowra and Riverina we have created a wine with incredible freshness and character. This wine exhibits citrus and honeydew flavors further complexed by creamy French oak aromas. The palate is soft yet fresh with balanced acidity and a soft creamy finish. This wine will develop well over the next few years. |

| Harvested early to mid season, Chardonnay in the Riverina and Riverland regions exhibits ripe rockmelon and peach characters, without being overly tropical in flavour.
The fruit is crushed though widened rollers and then gently air bag pressed. Free run and pressings components are kept separate, using only the free run for Yellow Tail Chardonnay. The juice is then cold settled and lightly fined to remove harsh phenolics before being fermented by specially selected yeast strains. As soon as the fermentation is complete, the wine is cold stabilised and gently oaked for 6 months prior to bottling.
