Mirabelle Brut is a unique blend of hand-harvested Napa, Sonoma, and Mendocino county
Chardonnay and Pinot Noir, picked at their optimal maturity from select, low-yielding vineyards.
Throughout the growing season the grapes are constantly cooled by the breezes coming from the
Pacific Ocean, which adds to the potpourri of flavours that unfold in the future.
During harvest, these premium grapes are carefully sorted and placed into small bins to reduce any
possible damage. The grapes are then pressed to provide superior quality juice for the production of
Mirabelle Brut. After the primary fermentation, the base wines are allowed to rest in our cool
underground cellars. Between 20 to 30 percent of these wines are barrel aged for two to six years.
The various still wines are then individually evaluated and carefully blended by our winemakers to
undergo fermentation in the bottle. After bottle aging on the yeast for at least two years, Mirabelle
Brut is ready to be enjoyed.

| Stylistically, Mirabelle Brut has an elegant, toasty aroma, which leads into crisp and complex flavors
on the palate. It is impossible to mistake Mirabelle’s Northern California heritage - the freshness on
the mid-palate continues through to the finish. Mirabelle Brut pairs well with fish and shellfish, light
appetizers and pasta. |
