Eisrébe is a stunningly rich, viscous dessert wine which shows pronounced aromas and flavors of ripe peach, nectarine and apricot, offset by notes of citrus and honey. The texture is smooth and round, with a finely balanced acidity leading into a fresh, lasting finish.

| Grapes for Eisrébe are all grown on the Spring Valley estate. Phelps' approach to this wine is to harvest at optimum maturity and then transfer to cold storage outside the winery for freezing. Frozen grapes return to the winery where they are pressed, increasing the sugar content of the juice by about half through the elimination of ice. Fermentation takes place in temperature controlled stainless steel tanks and is allowed to progress until the wine reaches eight to ten percent alcohol and residual sugar of 23 to 25 percent. The wine is then bottle in the early spring following harvest, without oak contact. |
