The Pfaffls have decided to cultivate St. Laurent on the Altenberg vineyard which sits at the same latitude as Burgundy. The diernals – or temperature-differences between day and night, caused by proximity to the nearby forest, brings slow growth, which suits the St. Laurent grape. The grapes can remain on the vines for a longer time which brings more complexity into the wine. The soil here consists of loamy loess, and the vines are approximately 6 years old.

| The grapes are hand harvested. Fermentation takes place in stainless steel tanks for approximately 21 days with pumping over with automatic temperature-control at 28°C. Aging takes place for 16 months in 100% barrique before bottling. |
