After graduating UC Davis with a degree in enology, Mike worked as the winemaker at Field Stone alongside Andre Tchelistcheff, a world renowned winemaker. Mike employs traditional techniques including open-top fermentations and extended macerations. Estate grown fruit is supplemented with grapes purchased from respected growers in Dry Creek Valley. The Optima portfolio includes Cabernet Sauvignon, Zinfandel, Zinfandel Port, Petite Sirah and Riesling.
Tasting notes
Rich and concentrated notes of dense black cherry, boysenberry, raspberry, espresso, dark chocolate and lavender are framed by sweet oak and vanilla. Rounds tannins are nicely featured on the long and silky finish.
Technical notes
The grapes were fermented to dryness and macerated an additional 21 days to soften the tannins. The wine aged 21 months in French oak (90%) and American oak (10%).
