| Wine maker notes |
| Ferrari Perlé is made using the traditional metodo classico. After a hand-harvest at the end of September, the wine undergoes a gentle pressing. A first fermentation occurs in stainless steel tanks for a duration of one month at a controlled temperature of 66˚F. The wine is then bottled and a second fermentation occurs with selected yeasts. |
