"Carbonic maceration. A young wine made in the old way."
| Tasting notes |
| AROMA: Intense frutal expression, with notes of mulberry and raspberry against a background of thick sweet strawberry jelly, with touches of liquorice.
COLOUR: cherry with violet lights; medium high layer.
FLAVOUR: Fresh, meaty. It seems bubbly, which gives it a lively quality. Slips down the throat easily. |
| Wine maker notes |
| Grapes hand picked into 15-Kg boxes so as to keep the bunches whole until they were cold-macerated in the fermenting tanks over a 4-day period. Low-temperature fermentation to retain as fully as possible the floral and frutal aromas. Gentle pressing. Following malolactic fermentation, the wine was fined and bottled. |
