In 1965, Jack and Jamie Davies established Schramsberg Vineyards. One of the pioneers of the area, they set set out to make world-class sparkling wine on property originally owned by Jacob Schram. This 220 acre estate is located in Napa Valley’s Diamond Mountain District and its caves, which were dug in the 1880’s, extend over 30,000 square feet. The Schramsbergs produce limited quantities of handcrafted sparkling wines from grapes grown in their 43 acre estate vineyard and with fruit harvested from superior parcels located in cool climate, including Napa-Carneros, Sonoma-Carneros, Mendocino County and the Sonoma and Marin coastal areas. The winemakers draw from 120 vineyard blocks covering 371 acres to create 220 base wines each year. Many of Schramsberg’s viticultural and winemaking practices are carried out by hand – grapes are hand-harvested, the bottles are stacked and riddled in underground caves by hand. The J. Schram, Schramsberg’s top offering, is even hand-labeled. They are unique among California sparkling wine houses in that they barrel ferment 25% of their juice to produce rich, flavorful and complex wines. A world-class winery and recognized leader in the California wine industry, Schramsberg produces America’s finest sparkling wines which have been served proudly at state functions at the White House and abroad for decades. Jack and Jamie’s son Hugh now manages the winery.

The rich, nearly tannic, frothy 2005 Reserve (74% Pinot Noir and 26% Chardonnay) offers notes of apple pie, honeysuckle and earth. Made in a bigger, firmer, more structured style compared to the J. Schram, it is pure with persistent bubbles, and should drink nicely for 5-8 years.

Very fine and complex, this is a great sparkling wine, but one that needs lots of time in the bottle. A classic brut blended with Pinot Noir and Chardonnay, it’s rich with flavors of strawberries, limes, vanilla and honey, with lots of smoky toast and yeastiness. Technical notes
(74% Pinot Noir/26% Chardonnay). Representing about three percent of Schramsberg’s annual production, this richly flavored and full bodied wine is a blend of the best base wines from that vintage. Fruit is sourced from vineyard sites in Mendocino, Sonoma and Marin counties. A small percentage of Chardonnay was included in the blend to lend additional backbone and length to the palate. Barrel fermentation (40%) and malolactic of particular lots provide viscosity and depth. Each bottle is aged sur lie for a minimum of six years in the estate’s caves.

Food pairing
The Reserve is well suited for service with main courses, especially such choices as veal tenderloin and roast duck, or with full-flavored fish such as sea bass. This delicious bubbly also pleases as an aperitif. Try it with smoked oysters, caviar or crab cakes.
