What is it? A white varietal grown in Burgundy and is the poor stepchild to Chardonnay. What does it taste like? Well, itís pretty acidic in France, but with aromas of apples and lemons? CFV Aligote, is a bit softer in style. Wonder if I have ever had it before? Generally itís used in blending, so you would never know. But if you have traveled to France and enjoyed a Kir before your meal, you most likely have had Aligote. Due to the acidity, the French add cassis to make it palatable. Why did we make it? When Jim began making Hildegard a Pinot Gris and Pinot Blanc Blend, he added 5% Aligote to provide the clean finish, as its natural acidity helped cut the richness of the wine. He now grows Aligote at Le Bon Climat. He was so happy with how it tastes decided to bottle a small amount for the wine club and tasting room. Enjoy this delicious and unique wine.
