Double cask matured. A deeper sherry influence adds more spice and a liquorice tang. Greater age adds body and develops the distinctive fruitiness to a rich raisin character. Rich and complex, notes of toffee and butterscotch combine with ripe peach and bitter orange. Perfect structure. Initial notes of soft apricot and cream are offset by developing flavours of old leather and oak with a touch of honey.. This has a significant proportion of sherry wood and it marks a real step up from its younger stablemates. It boasts a stylish nose of old leathery cigar boxes, vanilla, and orange marmalade. Syrupy on the palate, with oranges, sweet sherry, honey, and figs. Spicy oak, caramel, citrus fruits, and aniseed in the lengthy finish.Reviewed by: Gavin Smith (Summer 2018)
