Unlike the longer-aged \"Lozio\" red, the entry-level Santuvario red is made annually, from Ivano's younger (20-to-40-year-old) vines in both Boca and nearby Maggiora, on 400m-high sites in the middle of the woods on porphyry-rich volcanic soils. Ivano works the vines organically and by hand, including manual harvest. The fruit is destemmed and co-fermented with native yeasts in stainless steel tank with a two-week maceration.
