He credits meeting and tasting with Pierre Overnoy from the Jura as a huge influence on the style of wines he learned to love, and sought to make. In 2005 he established Azienda Agricola Serragghia and started working the vines, with the help of a horse, and now vinifies entirely in Anfora, without the use of sulfur. Gabrio also produces some of the only capers you will find that are grown and harvested without the use of any chemicals at all. Normally capers are some of the most chemically treated crops on the planet, due to a species of fly that devours them.
