In 2021 the Dijon clones from the west side of the property added structure and intensity to the wine, while the Flowers clone block added dark color, and finally the Pommard adds a delicate floral note and roundness to the body to balance the wine. The wine was fermented in 1 and 2 ton lots prior to barrel aging for 11 months in 30% new French oak. Tasting notes 2021 Elemental Reserve aromatically shows a depth of bright fruit, red cherry, strawberry, and ripe yellow peach. The oak profile is well defined, caramel and coconut flavors add to the fresh fruit character on the nose, while on the palate the barrel aging brings a subtle richness in texture.
