50% Côt/50% Grolleau. This méthode ancestrale rosé is Pinon's only non-Chenin wine, made from black grapes planted by François Pinon's father in order to supply their vineyard workers with red wine. The parcel is just 0.4 hectare in size, so production is small, if it happens at all (as it did not, for example, in the frost-stricken vintage). The juice ferments spontaneously with native yeasts for around 2 weeks and is bottled, finishing dry about 2 weeks later. The bottles are disgorged in the spring after the vintage and receive zero dosage.
