Nose: Fresh, appetizing with little or no trace of smoke. Subdued citric fruitiness with a whiff of oil & mouthwash Taste: Sweet start, pleasantly light fragrant smokiness Finish: Sweet smokiness in the lingering, slightly sour finish Caol Ila is pronounced 'Cull Eela'. For more than 100 years, small coal-fired 'puffers' like the SS Pibroch brought barley, coal and empty casks to the distillery, returning her whisky to the mainland through the Sound of Islay. Today, Caol Ila's secret bay is only known to true Islay devotees. The barley used here is still malted locally at Port Ellen and pure spring water still rises from limestone in nearby Loch Nam Ban, then falls to the sea at Caol Ila in a clear crystal stream, just as it always has.
On the nose, fresh fish wrapped in bacon with a squeeze of lemon, cooked at a beach barbecue. Floral and allspice notes emerge. The palate is lightly oily, medium-peated, meaty, and softly spiced, with pineapple and melon. The finish dries, with more fruit and peppery peat. Balanced and inviting.. 43% alcohol. This delicious and well-made single malt is sweet with light flavored smokiness. Balanced smoke and salt, fresh light style with a lingering charred-dry finish.
