So well knitted... The most oaky and least floral of the range. But age and a particular selection of casks has achieved a distinguished maturity, almost intimidating. Sherry notes give additional depth to the distillery character and a cakey sweetness. Aromas are perfectly melted, especially when The Glenlivet 21 Year Old is enjoyed without water. Wood is well integrated but firmly frames the aromatic palette. A very special dram to enjoy with dark chocolate and let pleasure linger late in the night.. This expression is reputed to contain some whisky up to 40 years old and was matured in a mix of bourbon and sherry casks. The nose offers overt sherry influences, with fruit malt loaf, maple syrup, honey, and old leather. Full and slightly oily on the rich palate, with toffee, raisins, Brazil nuts, and fresh cake mix. Dried cherries and apricots intermix with caramel on the slightly smoked nose. It is rich and spicy in the mouth with dark notes of coffee, chocolate and caramel flavors. The mouthfeel is smooth and coating. Rich and complex.
Opening bouquet offers sedate fragrances of dried flowers and malted barley; aeration stimulates marginally bigger aromas of dried yellow fruit (baked banana), toasty oak barrel and still-vigorous spirit. Palate entry is succulent, honeyed and luscious; midpalate tastes of dates, figs, S'mores, cocoa butter, nougat and dark fudge. Finishes oily, buttery, honey-sweet and focused.- P.P. A cedary touch. Balsamic spices. Cubebe pepper. A hint of eucalyptus. Tropical hardwood. Oak soon gives way to malty notes. Fruit and fibre cereal bowl. Toasted granary bread. Citrussy freshness. Orange and kumquat peel. Some cakey notes. A reminder of Grand Marnier souffle.
With water: Water enlightens the fruity bouquet and brings out vanilla notes. Lighter notes of ripe peaches. Pear and marzipan pie. Luscious barley sugar aromas.. AMBER, OPULENT OAKINESS. FRUIT-CAKE, APPETIZING MALTINESS. NUTTY AND SPICY. DISTINGUISHED. Liquor
