Redbreast Lustau, a new way to experience our signature sherry taste, thanks to an old friendship. The whiskey is initially matured in traditional bourbon and sherry casks for a period of 9-12 years. It is then finished for 1 additional year in first fill hand selected sherry butts that have been seasoned with the finest Oloroso sherry from the prestigious Bodegas Lustau in Jerez.. The Inception of sherried whiskies: a single pot still Irish whiskey that's initially aged in ex-bourbon and ex-sherry casks, and then finished in even more sherry casks. Redbreast master blender Billy Leighton worked with Bodegas Lustau in Spain to season custom casks with the winemaker's Oloroso sherry. (The casks themselves are unique in shape; they age on pallets, rather than on their sides, and thus bear weight differently.) The fully mature Redbreast spends a year taking on additional sherry notes from these first-fill Oloroso casks. The result is a richly full-bodied whiskey that manages to have both a dry palate and clean, sweet finish. Redbreast Lustau was our Irish Whiskey of the Year in 2016. (Watch our video tasting here.)

This robust newcomer is a collaboration between the master blender at Midleton Distillery and winemakers at Bodegas Lustau; the whiskey spends time in former oloroso Sherry barrels. Big, spicy flavors sweep over the palate in waves: vanilla, waxy honey, apple butter, dried apricot and dried fig, drying to chamomile tea and oak midpalate, and winding into a rich honey finish.. 46.00%.
