The winery was founded in 2020 by Xaime Niembro, who, after making mezcal for 10 years in Oaxaca, decided to continue to explore the diverse range of ingredients that Mexican soil could offer and the endless possibilities of creating delicious beverages from them when approached from a strictly natural style. In his opinion, there is no other approach that respects the planet and is beneficial to the people who consume the wine โ the two points most important to him. This estate makes only natural wine. All wines are fermented on ambient yeast, receive no corrections, and are bottled without fining or filtration. No sulfites are used at any point in the process. Most grapes are sourced from organically farmed estate vines with a small supplement from the organic vineyards of a friendโs estate in Guanajuato. They make almost no wine! These are utterly reference wines that are destined to be highly allocated. โBarrigonโ is the word in Spanish for someone with a big belly! This struck them as a great name because everything that goes to your belly should make you feel happy, it should be something you enjoy. The label of each wine has a person on it that represents each of the โBarrigonesโ that is part of the team that makes this wine possible, all represented with big bellies and fun attitudes. Joy of life, companionship and respect for each other and the planet are the focus of this estate.
