Breton Vouvray Sec La Dilettante is a dry Chenin Blanc from Vouvray in the Loire Valley. It comes from 40-year-old vines planted in flinty soil. The grapes are pressed very gently and vinified briefly in stainless steel, with no malolactic fermentation. The wine is bottled in the spring after harvest and is made for immediate drinking.
Catherine and Pierre Breton farm eleven hectares just east of Bourgueil in the village of Restigné. They mainly make Chinon and Bourgueil from Cabernet Franc, with a small amount of Chenin Blanc for Vouvray. They received organic certification in 1991, introduced biodynamic practices in 1994, and have recently begun the three-year process of biodynamic certification. Pierre is the principal cellar master, while Catherine makes the La Dilettante cuvées.
