Sercial (100%). Several mixtures of soils derived mainly of basalt, trachytes and trachydolerites, tufa, scoria and conglomerates. The grapes were de-stemmed, crushed and pressed then allowed to ferment in temperature controlled stainless steel tanks. Fermentation is stopped after six to seven days in order to achieve desired sweetness. Aged in old oak by using the "Canteiro" sytem. Residual sugar level of 56.6 g/L, pH content 3.41, acidity 7.6 g/L (as tartaric acid), sulphur 30 mg/L. "Canteiro" is an ageing practice where the wine is aged slowly in barrels in warm rooms or under the sun. This Maderia presents aromas of toffee and roasted nuts, flavors of candied orange rind, chocolate and buttered pecans all balanced with zesty acidity. Winemaker Juan Teixeira
