Nuits d'Ivresse, or "Drunken Nights," is a Cabernet Franc cuvée from Bourgueil in the Loire Valley. It comes from selected old vines on clay and limestone sites. The wine is vinified in barriques, kept in wood for a year, and bottled the following December, a little over a year after harvest. It is an homage to the methods of Jules Chauvet and sees no sulfur at harvest, during vinification, or at bottling. It should be drunk soon or stored in the dark at 14°C or cooler.
Catherine and Pierre Breton farm eleven hectares in Restigné, just east of Bourgueil, and make Chinon, Bourgueil and a little Vouvray. They introduced biodynamic practices in 1994, after organic certification in 1991, and have begun the three-year process of biodynamic certification. Pierre is the principal cellar master, while Catherine makes the La Dilettante cuvées.
