Corail is the Côtes de Provence rosé from Château de Roquefort in France. It has a coral color and an expressive nose of sweet pea, pink grapefruit and white pepper. The palate is lively, with crushed raspberries and more red fruits on the finish. The blend is led by Syrah, with Grenache, Carignan, Cinsault, Vermentino, Mourvèdre and Clairette. It is directly pressed and partially destemmed, with some varieties given an 8 to 24 hour cold maceration. Fermentation is natural, between 64 and 73F, and the cellar works by gravity whenever possible. It is 12% alcohol.
Château de Roquefort sits in the Côtes de Provence between the Sainte Baume massif and the Calanques National Park. Cédric and Violaine farm around 30 hectares organically (certified in 2006) and biodynamically, on clay-limestone terraces at 390 meters. Altitude and a North/Northwest exposure keep the wines fresh.
