Daniel Chotard Sancerre Cuvée Les Cris is a Sauvignon Blanc from Sancerre in France's Loire Valley. The grapes come from the domaine's oldest vines, planted by Daniel's father and uncle. The wine ferments and ages in foudre for one year, then is racked to stainless steel tank for another six months before bottling. It does not go through malolactic fermentation.
Daniel Chotard lives just outside Sancerre in the village of Reigny with his wife, Brigitte. His family has made wine for well over two hundred years, though Daniel began as a teacher. He and his son Simon farm the slopes of Crezancy-en-Sancerre, where flint meets clay and Kimmeridgian limestone. They farm sustainably and treat the vines with organic composts. Daniel harvests later than his neighbors, which gives less of the acidity typical of the appellation, and aging on the lees rounds the mid-palate.
