Danjou-Banessy Clos des Escounils is a white wine from Côtes du Roussillon in southern France, made from Grenache Blanc, Grenache Gris and Grenache Noir. The vines are over 100 years old, farmed organically and harvested by hand.
All three grapes are directly pressed. Fermentation uses indigenous yeast in large oak barrels, with no chaptalization or acidification. The wine then ages for two years in foudres, and it is unfined and unfiltered. It is bottled by gravity in accordance with the phases of the moon.
