La Queue Au Renard is a red from the Côtes du Jura, made from 100% Pinot Noir. The 40 year old vines grow on a single 0.6 hectare parcel in Passenans, north of Château-Chalon, on Triassic marl soil. The grapes are hand-harvested and sorted, then macerated for about a week as destemmed whole berries. The wine ages 12 months in oak barrels. It shows red and black fruit (raspberry, morello cherry, blackberry), white pepper and floral notes, with a refined texture and good freshness.
Jean and Chantal Berthet-Bondet came to Château-Chalon after studying agronomy in Lyon and picked their first vintage in 1985. They started with an old barn for the vats and a 16th century cellar under their house. Their Château-Chalon oxidizes slowly in oak barrels for more than six years, and they also make a crémant, a Chardonnay and a red called Ruby.
