Réquieu is a red from the Cabardès appellation in Languedoc, France, made from 50% Syrah, 40% Cabernet Sauvignon and 10% Grenache. The nose shows raspberries and spices, and the palate is fresh with a pleasant tannic structure. The grapes are picked by hand from isolated parcels in the Montagne Noire at 350 meters, between garrigue and pine forest. Fermentation uses natural yeast after a long maceration in a gravity-flow winery, with no wood, and the Syrah is fermented as whole clusters. It is 14% alcohol.
Domaine de Cabrol sits just north of Carcassonne, on the southern flank of the Montagne Noire. The Carayol family has grown grapes here for generations and now owns 150 hectares in the hills, with about 20 under vine in small patchwork parcels. Nicolas Carayol runs the estate, which has the highest vineyards in Cabardès. The soils are broken rock full of 90-million-year-old fossils, and the altitude allows a harvest in mid to late October. His father Claude helped create the appellation in 1999.
