This is a non-vintage sparkling Brut from Vouvray in the Loire Valley, made from Chenin Blanc. It comes from La Dilettante, the series of cuvées that Catherine Breton makes under that label, a name that means "the Dabbler."
Catherine and Pierre Breton farm eleven hectares of vines in the village of Restigné, just east of Bourgueil. They are best known for Chinon and Bourgueil, with a small amount of Vouvray made from Chenin Blanc. They received organic certification in 1991, introduced biodynamic practices in 1994, and have recently begun the three-year process of seeking biodynamic certification. Their vineyards sit on gravel, limestone, clay, schist, and yellow tuffeau, and their wines have made them leading figures in the natural wine movement.
