Grape Varieties : Chenin Blanc. Farming Type : Biodynamic. They are farmed biodynamically and harvested by hand. The fruit is destemmed, pressed and barrel-fermented with native yeasts and minimal sulfur; the wine is aged in 1-to-3-year old barrels with a small proportion (1/4) of new oak for one year. Les Rosiers tends to read as the lightest and driest of the Belliviere line-up, though it does contain residual sugar; the acidity and minerailty balance out the potential sweetness and give cut and structure to the wine.
