This is a 2023 white Burgundy from the Savigny-les-Beaune appellation, made from Chardonnay and labeled Vieilles Vignes.
Guillaume and Aude Lavollée are the fourth generation of vignerons at Domaine Génot-Boulanger. Their wines come only from estate-owned vineyards spread along all three Burgundy côtes, from Chambolle-Musigny down to the domaine in Meursault and on to Mercurey. Across 22 hectares they make wine from over 30 appellations, which is unusual for a family-owned Burgundian domaine. Since 2008 they have converted to organic farming and experimented with biodynamics. Their philosophy is "maximum work in the vineyards for minimum intervention in the cuverie," aiming for wines that are true to their terroir.
