He prefers infusions instead of extractions. New barrels are sometimes needed for the appellation style but he tends to avoid it and prefers to use older wood, but for the Pommard which may get up to 30 % of new oak from Allier (France) . Volnay systematically gets less than 20% in order to keep its freshness and elegance. The aging is quite short, 8 to 10 month for the Bourgognes " generic" and 12 to 14 month for the Crus, with or without filtration depending on the millesimes.
