Domaine Huber-Verdereau's La Combe Danay is a 2020 red Burgundy from the Monthelie appellation, made from Pinot Noir.
Thiébault Huber founded the domaine in 1994 on family land in Volnay that dates back to the 19th century. He is Alsatian on his father's side and Burgundian on his mother's. The estate now covers a little over 9 hectares across 7 communes and 32 parcels. From the start he avoided chemical fertilizers and herbicides, relying on compost and ploughing. He began organic conversion in 2001, and the vineyard has been certified by Demeter and Ecocert since 2005. In the cellar he works with minimal intervention, favoring infusion over extraction, with no lee stirring, little new oak and short barrel ageing. Since 2012 he has produced his own natural sulfites with two neighboring domaines.
