This 2023 Bourgogne Passe-tout-grains is a red wine from Burgundy, France, made from Pinot Noir and Gamay.
Domaine Taupenot-Merme is based in Morey St Denis. It was created in 1963 when Jean Taupenot married Denise Merme, and it is now run by their children, Romain and Virginie Taupenot. Two estates, one in Morey St Denis and one in St Romain, were merged when Romain took over in 1998. Today the domaine farms 13 hectares across 20 appellations. Romain moved to organic viticulture in 2001 and takes a hands-off approach in the cellar. Fermentation is natural with indigenous yeasts, and the wines age 12 to 14 months on fine lees without racking, then spend 3 months in stainless steel. They are bottled without fining or filtration.
