Fino is the driest and palest style of sherry, and like all sherries, undergoes aerobic aging. In the case of finos (and manzanillas), oxidation is avoided by the spontaneous appearance of a veil of yeasts (called flor) on the surface of the wine which consumes the alcohol. Grapes are grown on estate vineyard โPago Balbainoโ on white albariza soils containing 70-80% limestone. The grapes are pressed and fermented in stainless steel. Headlined to 15% and subjected to biological aging under flor yeast in oak barrels for the traditional solera and criaderas system. The average age of the wine is 5 years.
