This 2024 Pouilly-Fumé is 100% Sauvignon Blanc from the Loire Valley. It is built from 30 parcels across 5 communes of the appellation, each vinified separately with native yeasts after a 6 to 7 hour cold soak on the skins. The wine rests 4 to 5 months in tank on its fine lees, and the lots are blended in March. The nose shows pink grapefruit and exotic fruits such as peach and mango. The palate is balanced, with richness, freshness and structure, and a long fruity finish.
Jean Pabiot et Fils, known as Domaine des Fines Caillottes, dates to the late 19th century and is based in Les Loges. Alain Pabiot and his son Jerome, the 4th and 5th generations, farm 29 hectares on limestone with white pebbles, fossil-rich marl and flint. The estate is certified Terra Vitis and uses no synthetic fertilizers.
