This 2022 Chablis 1er Cru Mont de Milieu is a Chardonnay from a steep, south-facing vineyard near Fleys that borders the Grands Crus. The family owns two-thirds of a hectare there, with vines averaging 26 years old on Kimmeridgian limestone-clay with stones and sea-shell fossils. It tastes of lemon cream, citrus and minerals, with focus and persistence. Two-thirds ferments and matures on fine lees in tanks. The rest starts in tank, then finishes fermentation and ages in 228 and 600 liter oak casks, 1 to 5 years old, until March. The parts are blended in June. It needs three to five years of bottle age.
Corinne and Jean-Pierre Grossot, now joined by their daughter Eve, are the third and fourth generations at their family domaine. They farm 18 hectares centered in Fleys, on the right bank of the Serein River, about a third of it Premier Cru. Their vineyards have been certified organic since 2015, and the wines are vegan.
