Touzot Macon-Villages is a white Burgundy made from Chardonnay in the northernmost part of the Macon region, just south of the Cotes Chalonnaise. The grapes are hand-harvested and quickly pressed in a bladder press to extract fruit and aroma without bitterness. The juice ferments in temperature-controlled stainless-steel tanks, and the wine is bottled in April.
Domaine Jean Touzot is a three generation family estate in Martaily les Brancion, near Tournus. Half of their 12 hectares is Chardonnay, grown on clay-limestone slopes at about 200 meters, including the 3 hectare Les Parettes vineyard. The vines average 30 years old. Frederic Touzot took over in 2002 and moved the domaine toward sustainable farming. He stopped using herbicides, treats the vines only when necessary, and plows the soil to push roots into the limestone.
