itโs fresh, bright, and unlike anything else. We create an infusion of whole strawberries (with their green tops), grapefruit, and orange peels in grape brandy, then โwashโ the fruit with wine to pull out every last bit of flavor. That is all mixed together in tanks, where we then do a quick infusion of dried hibiscus flowers, which deepen the red color and provide a beautiful floral and tart note. The resulting aperitif is bright and lifted, with a subtle bitter backbone that balances the sweetness.
